Prawns Fry ( chemmeen varathathu )




Ingredients
Prawns - 1/2 kg
Red chilli powder - 1tsp + 1/2 tsp
Turmeric powder - 1/4 tsp
Pepper powder - 1/2 tsp
Cocum ( kudampuli) - 1 piece
Oil
Curry leaves
Coconut pieces
Method
Cook cleaned and deveined prawns with 1 tsp red chilli powder , turmeric powder, black pepper powder , cocum, 1/4 cup of water , salt ; in medium flame till the water dries up.
Heat a kadai , add oil , chopped onions, coconut pieces.
Once they start browning add 1/2 tsp chilli powder and the cooked prawns. Add curry leaves.
Saute first in high flame ( approx 5 minutes ) and later in medium flame (approx 10 minutes) . Stir well to prevent burning.
Check salt and adjust to taste.
Saute till the prawns are roasted well and crisp.
Serve hot with rice or roti.
