Tawa Butter Nan

Recipe source: Remya'srecipe , Manjula's kitchen
Ingredients
Maida - 2 cups
Dry yeast -1 tsp in lukewarm water
Baking soda - a pinch
Sugar - 1 tsp
Salt - 1 tsp
Yogurt - 3 tsp
Oil - 2 tsp
Butter for garnishing
Mix the dry ingredients well
Add oil
Add yogurt ,
Add yeast in lukewarm water
Knead well into a smooth dough
Cover it and let it rest for 2-3 hrs
After resting take the dough and knead again
Divide into equal parts ( 2 cups of maida gives approx 8 Nans).
Knead the divided dough again .
Roll them into thin sheets using a rolling pin .
Cook them on both sides on a hot tava .
Drizzle butter on top once cooked.
Notes
It is easy to make.
Tastes better than restaurant nan .

Sweet Potato with Onion Green Chilli Chutney (Ulliyum pachamulakum chathachathu)



Needed 

  • Shallots - 6
  • Green chilli -2 or to taste ( I get long hot green chilli here )
  • Salt to taste
  • Coconut out - 2 tbsp
Method
  • Chop shallots and green chilli finely.
  • Add salt .
  • Using a mortar and pestle crush it nicely.
  • Add coconut oil and mix well
  • Serve with Tapioca, Sweet potato , Arbi, Purple yam

Prawns Fry ( chemmeen varathathu )




Ingredients
Prawns - 1/2 kg
Red chilli powder - 1tsp + 1/2 tsp
Turmeric powder - 1/4 tsp
Pepper powder - 1/2 tsp
Cocum ( kudampuli) - 1 piece
Oil
Curry leaves
Coconut pieces
Method
Cook cleaned and deveined prawns with 1 tsp red chilli powder , turmeric powder, black pepper powder , cocum, 1/4 cup of water , salt ; in medium flame till the water dries up.
Heat a kadai , add oil , chopped onions, coconut pieces.
Once they start browning add 1/2 tsp chilli powder and the cooked prawns. Add curry leaves.
Saute first in high flame ( approx 5 minutes ) and later in medium flame (approx 10 minutes) . Stir well to prevent burning.
Check salt and adjust to taste.
Saute till the prawns are roasted well and crisp.
Serve hot with rice or roti.

Cardamom Tea


Method ( for 4 cups )
  • Add 2 cup of milk and 2.5 cup of water in a sauce pan . (Measure in the cup you will be serving tea. )
  • Add 3-4 crushed cardamom pods . 
  • Boil and when it starts bubbling lower the flame , add 2 tsp tea leaves ( I use Kannan devan classic ) . 
  • Add sugar to taste
  • Let it simmer for a minute. Or depending on how strong you want your tea. 
  • Look for the colour and remove from heat. Strain using a strainer to a tea pot or directly to tea cup .
  • Serve hot !

Water Melon Crush



Method

  • Take watermelon pieces in a bowl
  • Add sugar to taste
  • Crush using a wooden spatula
  • Chill for 2-3 hrs and serve

Onion tomato chutney


Recipe source : ranjani's kitchen 
Method
Shallots - 15
Dry Red chilli - 4-5
Tomato -1
Garlic cloves -3
Salt to taste

For tempering
Oil
Mustard seeds
Urud dal

Grind shallots, dry red chilli, tomato, garlic to a smooth paste. Add salt also.
Do tadka with mustard and urad dal .
Add the chutney mix to it and heat till oil separates.
Goes well with Dosa, idli , Appam, Upma.
