Paneer Paratha




Dough 
1 1/2 cups of whole wheat atta
1/2 cup maida
luke warm water
salt
2 tsp oil
Knead dough and set aside to rest .

Filling
Crumbled paneer
2 onion finely chopped
corriander leaves finely chopped
1/4 lemon juice squeezed
salt to taste.
Mix the filling . Take 1 or 2 tsp of the filling for each paratha . Either keep the filling in the centre and fold the rolled chapathi . Or keep it in the centre fold the chapathi from all four sides . Roll with care to make roti . Make yummy tasty parathas . Ideal for kid's lunch box.

Penne pasta with spaghetti sauce , shrimp and veggies .




My first successful try at a pasta recipe. The first one was almost three years back and a fiasco. This one came out well . I should confess I ended up adding almost every thing I found in the recipes I surfed though. So I cannot say it is an authentic recipe. Anyway I am a strong believer of 'All's well that ends well ' !

Here you go 

Recipe
Ingredients
1. Penne pasta
2. Garlic cloves - 5 to 8
3. crushed black pepper - 3 -5
4. juice of half a lemon
5. Some herbs- basil / thyme/oregano ( I used 1 tsp all purpose seasoning)
6. Veggies - bell pepper/corn/mushroom/ carrot / onions/broccoli / lettuce leaves/celery ( choose 1or two after checking your stock :P)
7. shredded chicken pieces/shrimp/ shredded meat or mince ( again choose what you have . I added sugar syruped dried shrimp )
8. Spaghetti sauce - 1/4 cup
9. Cheese - 1/4 cup grated cheese ( I used 3 cubes Amul cheese bars :P )

Cook pasta al dente according to the instructions in the packet . Drain and keep aside.

In a skillet saute crushed garlic and black pepper.
Add veggies . Saute for some time.
Add herbs - dry or fresh . Saute for some time
Add lemon juice . Again saute :0
Add chicken/meat/prawns/sausage/mushroom . Saute for a few more minutes
Add 1/4 cup spaghettie sauce . Mix and cook for a few minutes . Check the salt and adjust to your taste.
Toss in drained pasta . Again mix and cook for a few minutes.
Add grated cheese . Saute for a few minutes or till the cheese starts melting .
Serve hot . Enjoy !

Vegetable fried rice with sauteed chicken





To a wok add two tsp butter , crushed garlic cloves(4-5nos) , crushed pepper corns (8-10nos) . Saute for some time. Add diced onion (2nos big ) , two green chillies. Add some cooking oil if needed.

Add chciken as small pieces. Saute for some time (20 - 25 minutes) . Till the onion gets golden brown . (I use this time to make fried rice.)

Add capsicum , spring onion, baby corn , carrots (all or any) . Add one tsp soy sauce , 2 tsp sweet and sour sauce. Again saute for some time. Serve hot .
